Is there a reliable way to assign an app variable to a theme?
This doesn’t seem to work.
I’d totally settle for a way to set a theme variable through a logic flow.

Yes theme variables cannot read variables unfortunately 
But a Set theme variable flow function sounds really useful, you can submit a feature request for it here. I think the best in this case (though a bit time consuming to set up…) is to use app variables instead of theme variables. However that would entail going through the style properties of each component
